When I was in Grade 1 I remember drawing my future career as having a chef’s hat. It didn’t happen. Yet that hasn’t stopped me loving trying and creating a wide range of food at home, much to both the joy and chagrin of my family. The running joke has been that while I always made good food, my ability to clean the kitchen left much to be desired.
However, I’ve always taken great joy in not just producing one dish, but in pulling together a menu for people to enjoy. Usually, for family and friends, they will ask for ideas and I’ll send them some. Menu’s that are fun and exciting, but also able to be made in your own kitchen. This is where the inspiration for Total Feasts has come from, a desire for people to look at creating more food in their own kitchen for (and with) family and friends.

So, it is fitting that this first feast is all about taking a rather mundane concept: chicken sandwiches, fries and cheesecake, and making it rather more special. Now it is all about balancing spicy with tangy and savory.
First, we have a brilliantly tasty chicken sandwich, with a super quick marinate which also acts as a light spicy crust. Topped with tangy cilantro lime sauce. Seriously, this sauce is brilliant, make extra to dip your fries into. Finish with some herby garlic fries and a creamy and tart cheat’s cheesecake, and voila the Cool Chicken Feast. I love the angle you bring to your site, Matt! The food always looks amazing, and I appreciate the extra tips like music and drinks for pairing. (Pairing is easier said than done, so I respect that!) I know what you mean about the chef’s hat. I thought it might be fun to be a chef/baker, but then I realized the hours are awful.
